Cheese corn toast is quick and easy, scrumptious snack, a favorite with most kids and adults too! Matar paneer is a popular North Indian dish , loved by one and all. Paneer (Indian cottage cheese) and green peas are cooked in a onion tomato based gravy seasoned with aromatic spices. To add to it’s richness, cashew nut paste and cream are usually added, however I skipped the cream and just added the cashew nut paste. This dish is mildly spiced with a hint of sweetness. I’m back with another healthy, vegan & kid-friendly snack recipe – Soy and spinach croquettes! I had this large box of organic spinach that I got from Costco, I used it at least three times and yet I had about 2 cups remaining. I thought I would experiment with it in the form of croquettes. To add some volume and health quotient to it, I added Soy granules/TVP. It made for a very interesting combination, they were moist and delicate on the inside, delicious from all the seasonings with a crisp exterior, basically everything you wish for in a deep fried snack 😀 Continue reading →
I had some leftover canned mango pulp that was sitting in the ziplock bag, which I could have easily had as it is! But the blogger in me was itching to do something with it. Browsed through my refrigerator , I had a sponge cake, cool whip and I had recently bought mangoes from the grocery store ! So I already knew what I was making – parfait it was. The previous night I prepared the jelly and let it set , so I could put this together the next day. This is quite similar to the fruit custard and jelly I’ve shared earlier , except this time I took the shorter way out and used cool whip instead of making the custard. You could also use some yogurt , sweeten it and whisk it well to get rid of any lumps. To make it even more decadent how about a cream cheese plus condensed milk mixture ?
