Baked sabudana vada (Tapioca fritters)

Sabudana or sago vada is a sumptuous and delicious, deep fried snack popular in Maharashtra, India. It is made of soaked sabudana aka tapioca pearls, boiled and mashed potatoes, coarsely crushed roasted peanuts and a few spices.
